Ingredients

Serves: 4+

Metric Cups
  • ½ packet quorn mince
  • 1 green pepper (sliced)
  • 2 cloves garlic
  • 1 chilli (fresh, more if you like)
  • 1 large onion
  • 1 teaspoon cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 2 tins chopped tomatoes
  • 30 grams chocolate (70% cocoa, grated)
  • 1 handful fresh coriander (stalks and head)
  • red chilli powder
  • 1 tin kidney beans
  • ½ packet quorn mince
  • 1 green bell pepper (sliced)

  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 2 tins diced tomatoes
  • 1 ounce chocolate (70% cocoa, grated)
  • 1 handful cilantro (stalks and head)
  • red chile powder
  • 1 tin kidney beans

Method

Fry all vegetables in oil until golden, add all spices and season then add mince until combined. Chop corriander stalks reserving heads for later and stir in with chopped tomatoes and beans. Add chilli powder if desired and season to taste. Simmer for 1 hour. Finish by stirring in chocolate. Scatter corriander over when serving with rice and tortilla chips.
