Warming Soup

Peal carrots, sweet potato, onion, celeriac, garlic, butternut squash(remove seeds from butternut squash) and chop roughly, add these to a large pan. Remove seeds from chilli and add to the pan. cover with water and boil until all veg is soft. Now using a hand held blender blend all veg together. Add the passata some salt and pepper, tear in the basil. Now serve the soup with a swirl of cream in the top and a crusty loaf of bread.

- 1 onion
- 2 cloves garlic
- ½ chilli (not a hot one)
- ½ celeriac
- 2 teaspoons fresh basil (or 1 teaspoon of dried)
- cream (to swirl in the top)
- salt (to taste)
- pepper (to taste)
- water (enough to cover plus a little more if soup is too thick)
