Apple Cranberry Bread With Lemon Brandy Spread

Introduction

Good for Christmas Baking and Gifting. Freezes well. Recipe from: "The Ark Cookbook", by Nanci Main and Junella Lucas. Bought book in the author's restaurant, " The Ark" in Washington State, on the coast line at the very tip of the state, really good place to eat at. This was in July 1993. For this one I actually had fresh cardamom pods that I freshly ground for the bread, boy the pungent smell, it was wonderful, and used some of the fresh ground cardamon in my apple pie that day. I do make this bread every year, frankly, it is so good without the spread. Just a good cup of coffee and a slice.

For the Bread

  • butter
  • caster sugar
  • eggs
  • vanilla extract
  • almond extract
  • flour
  • bicarbonate of soda
  • salt
  • cardamom
  • orange juice
  • apples
  • walnuts
  • cranberries

For the Spread

  • 227 grams cream cheese Softened
  • 2 tablespoons icing sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon brandy

For the Bread

  • butter
  • superfine sugar
  • eggs
  • vanilla extract
  • almond extract
  • flour
  • baking soda
  • salt
  • cardamom
  • orange juice
  • apples
  • walnuts
  • cranberries

For the Spread

  • 8 ounces cream cheese Softened
  • 2 tablespoons confectioners' sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon brandy

Method

  • Cream 1/2 c. softened butter till whitened. Add 1 c. sugar gradually. Add 2 eggs, one at a time, add 1 tesp. vanilla and 1/2 tesp. almond extract.
  • Shift together 2 cups. flour, 1 tesp. bicarbonate of soda, 1/2 tesp. salt, and 1 tesp. cardamom.
  • Add the dry ingredients to the creamed mixture alternately with 1/3 c. orange juice.
  • Fold in 1 c. peeled, cored, and coarsely chopped apple, 1/2 c. coarsely chopped walnuts, and 1/2 c. chopped cranberries.
  • Spread the batter into a 9X5 inch loaf pan that is lightly greased and lined on bottom and sides with cooking parchment. Gently tap the pan on a counter to remove air pockets.
  • Bake 50 -60 mins at 350 degrees F. until a toothpick comes out clean.
  • Let cool in pans 10 mins before removing to finish cooling.
  • Mix spread ingredients until smooth.
  • To serve, slice Bread and either spoon Spread a little on slice or use a star tip pipe. Garnish with a walnut half.
