Slit the fillet lengthwise without cutting right through. Open up like a book. Mix the rest of the ingredients apart from the streaky bacon. Season with freshly ground black pepper. Spread evenly inside the fillet. Close the fillet again. Wrap streaky bacon around the fillet, securing each piece with a toothpick. Barbecue over medium coals, turning once, until done to your liking. Remove toothpicks before serving.
