Very simple just pop in the oven kinda meal! I love vegetables and this is the easiest, fastest and simplest way to cook them.

Metric Cups
  • olive oil
  • courgettes
  • carrots
  • green peppers
  • red peppers
  • orange peppers
  • green beans
  • broccoli
  • garlic (unpeeled)
  • 2 oranges
  • olive oil
  • zucchini
  • carrots
  • green bell peppers
  • red bell peppers
  • orange bell peppers

Method

Easy - Vegetable Mix in the Oven is a community recipe submitted by RIIM and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Just chop vegetables into large chunks and one orange
  • Place all vegetables together in an oven pan (I prefer pottery)
  • Pour some good quality olive oil on them, and mix roughly with your hands
  • Cut the 2nd orange into round circles and place them on the top of the vegetables, just as a cover
  • Add some orange juice/water just for moisture (optional step)
  • Cover with aluminum foil and pop in oven at (350 F) for about 1 hour
  • You can keep flipping the vegetables around to prevent them from burning at the bottom of the pan, unless you have a good quantity of liquid

    You can use whatever quantities you like, depending on what vegetable you like more! These veggies are my faves. The cooking time varies with the quantity as well, just increase the time. You better not allow the vegetables to get to soft and mushy, they are better crunchy.
