Moist Chocolate Cake

Introduction

I made this cake for my boyfriend's birthday and everybody loved it. It is really moist and rich.

Ingredients

Serves: 4-6

For the Cake

  • 8 ounces chopped semi-sweet chocolate
  • ½ cup unsalted butter
  • 1 cup boiling water
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • ½ cup sour cream
  • 1 teaspoon baking soda
  • 2 cups flour
  • ½ cup unsweetened cocoa
  • 1½ teaspoons baking powder
  • ½ teaspoon salt

For the Ganache

  • ½ cup cream
  • 6 ounces semi-sweet chocolate

Method

  • Preheat oven to 180C (350F). Butter and flour a cake mould (with hole in centre).
  • In a double-boiler, melt 180g chocolate with the butter. Add hot water. Reserve.
  • In a big bowl, beat eggs with sugar and vanilla. Reserve.
  • In another bowl, mix together sour cream with baking soda. Reserve.
  • In another big bowl, mix flour with unsweetened cocoa, baking powder and salt. Reserve.
  • Add chocolate to egg mixture. Add dry ingredients and mix with wooden spoon until well incorporated. Add sour cream and the rest of the chocolate chopped.
  • Pour in the prepared mould. Cook for 50 minutes. Unmold and let cool.
  • Pour ganache on top of cake.
  • Ganache:

  • Bring cream to a boil.
  • Put chocolate in a bowl and add hot cream, mix until chocolate is completely melted.
  • Let cool slightly to thicken a little bit.

    • Hey, this recipe is fantastic and by now I have tried it 5 to 6 times. However many times it sinks in the middle. What could be the reason for that?
