Creamy Potato Bake

Layer the ingredients starting with the Potatoes in a greased dish (20 X 20). Leave a handful of cheese for later Cover and bake at 180c for 20 min till potatoes are soft. Sprinkle the last layer of cheese and bake uncovered till cheese is melted and starts to colour. Let it rest for few minutes and enjoy!
Introduction
The original recipe is from a SA outdoors magazine. Tried it and adapted it to our taste. Delicious as a meal on its own or as a side dish. You can experiment with different vegetables (as I have).

Serves: 4
- 4 large potatoes (cut in 1cm rings)
- 1 cup frozen sweetcorn kernels
- 1 cup mushrooms (cut into pieces)
- 4 slices diced bacon ( and fried lightly)
- 1 cup cream
- 2 cups Cheddar cheese
- 1 pinch of salt
- 1 pinch of pepper

Additional Information
The original recipe only had the sweetcorn, and that is delicious. You can add caramelized onions, brinjals, peas, almost any veggie you can think of and its still a winner.
