Heat half the oil in a large non-stick pan. Lightly fry the mince for five minutes. Add the spices and fry for a further two minutes, Remove from heat and set aside. Working quickly divide the filo pastry sheets into three strips. Holding the bottom end of a sheet form the last ¼ of the strip into a cone, triangle pocket, fill with the mince mixture and fold over the remaining pastry over the sides until you reach the end. Secure close by placing a few drops of water between the sheets. Continue with remaining strips. Place all six samoosas on a baking tray that has been coated with non-stick spray. Using a pastry brush, brush the remaining oil over each samoosa and bake in a 190°C oven for 20 minutes, turning half way through cooking time. Prep 15 min/Cook 20 min
