- 1 chocolate sponge cake
- 30 millilitres brandy (or sherry - optional)
- 6 white meringues (broken into pieces)
- 6 pink meringues (broken into pieces)
- 1 tin caramel
- 500 millilitres fresh cream
- 2 tablespoons sugar (whip together with the cream)
- 1 punnet strawberries (fresh)
- 410 grams lychees (canned)
- 3 kiwi fruit (peeled and sliced)
- mint leaves (to garnish)

- 17½ fluid ounces fresh cream
- 2 tablespoons sugar (whip together with the cream)

- 14 ounces lychees (canned)
- 3 kiwi fruit (peeled and sliced)
