Beat the eggs until pale, add sugar and keep whisking until it is smooth and glossy. Then add the vanilla and cream and milk and whisk until thoroughly combined. Switch on your ice cream maker and pour in. When it has churned and has become thick and store in container and freeze. remember to take it out of the freezer for ten minute or so before you eat to allow it to soften and for the flavours to escape. Absolutely divine!!

Serves: a tub
- 3 bananas (very ripe, mashed)
- ¾ cup soft dark brown sugar
- 2 large eggs
- 2 cups heavy cream
- 1 cup milk
- 1½ teaspoons vanilla extract
