Season the tenderloin Wrap it in the slices of streaky bacon so that every bit is covered. Place the onions and apples and garlic in a Dutch oven with the soy sauce, honey and a little of the chicken stock. Put the tenderloin on top of this and place it in a 350F oven for about 45 minutes. Use the rest of the stock to top up the braising liquid as needed. I normally cook this closed fro the first 30 minutes and the take the lid off for the juices to reduce down a bit. Remember that the time is a guideline because the different tenderloins and the different ovens will impact cooking time. They soy and honey you can increase as suits your palate... Samd
