Ingredients

Serves: 6 - 8

Metric Cups
  • 500 millilitres lemon curd
  • 1 can pineapple chunks
  • 250 millilitres cream
  • 1½ packets sponge fingers
  • 17½ fluid ounces lemon curd
  • 1 can pineapple chunks
  • 8⅘ fluid ounces cream
  • 1½ packets lady fingers or savoiardi

  • beat the cream to whipped cream - add the lemon curd, and stir gently
  • put bit more than half of the pineapple pieces in the lemon curd mixture, and stir gently
  • break the ladyvingers into pieces, and add to the mixture
  • put everything together in a flat bowl, and use the pineapple pieces that were left for decoration
  • cover it with plastic, and put in the fridge for at least one hour (2 is better)

    As with Tiramisu, you can also choose to make layers of the ladyvingers and the mixture. When doing this, you can use the juice from the pineapple, or orange juice to soak the ladyvingers (not toO long, else the whole thing will get too wet).
