Cold Cucumber Soup

Simmer cucumbers in butter in a pan for 10-15 minutes Blitz the cucumbers in a food processor with approx 2 dl chicken broth and let it cool. Before serving the soup add 2 dl heavy cream, which you have whipped very "lightly" (still a bit runny), salt & pepper to taste. Make some bread croutons and drizzle chives over each soup bowl
