Maple Syrup Fruit Muffins

Introduction

These muffins are really filling and go well with a cup of tea or hot chocolate.

Ingredients

Serves: 12

  • 16 ounces canned apples (pie apples, mashed)
  • 3 mashed bananas (ripe)
  • ½ cup golden raisins
  • ¼ cup coconut
  • ¼ cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • 4 ounces brown sugar
  • 4 ounces softened butter
  • ¼ cup vegetable oil
  • 2 large eggs
  • 8 ounces sifted flour

Method

  • Turn the oven on to 180C. Line a large texas muffin tray with muffin pans.
  • Mix together the apples, bananas, coconut and saltanas making sure to combine them well.
  • In a new bowl add the sugar, maple syrup, oil and butter together until creamed. Then add the eggs and beat until nice and pale.
  • Add the fruit mixture to the butter mixture and stir well to combine. Add in the mixed spices.
  • Now add in the flour being careful not to over beat it as this could cause the muffins to become tough.
  • Once this is done put the mixture into the muffin cases until it just reaches the top of the cases and then place the tray in the oven for 45min. You want the muffins to be moist but not undercooked.
  • Once they are cooked turn them out into a cooling rack. After 10min feel free to try one with a coffee.
  • Additional Information

    Brown sugar can be substituted for white or caster sugar but I find that the brown sugar gives these muffins a nice nutty chewy texture. Feel free to add nuts to the mix if you so desire.
