Oranges in Rosewater Syrup

Zest the peel off 2 of the oranges, place the peel in some water and cook the peel until it becomes translucent and soft. In a separate pan place the Orange Juice and Sugar simmer until it becomes a thick ish syrup, add the cooked zest and leave to cool. Peel the remaining Oranges making sure you have removed all the pith, at this stage you can either segment the oranges by cutting out the segments with a knife or slice the oranges into thin slices. Once Syrup has cooled mix in the Orange Flower water and Rose Water Essence to the cooled Syrup, and pour over the Orange segments/slices, Place in refrigerator to chill completely. It can remain the the fridge for up to 12 hours.

Another of my mother recipes from the late 70's early 80's that is a refreshing end to a heavy meal..

- ¾ cup orange juice
- 2 tablespoons sugar
- 6 oranges
- 1 teaspoon orange flower water
- 1 teaspoon rosewater essence

Additional Information
It is important that you do not have any pith on the oranges as this can lead them to be bitter. If you feel you do not get a distinctive taste from the Rose Water you can add a little more at this stage.
