In a sauce pan, combine the sweet potato cubes and sugar. Stir until all the pieces are coated with sugar. Add water and cook in low to med heat until the sweet potatoes are soft and the sugar has turned into syrup (approx 1 hour).

If you want a chewy, candy-like texture, you can omit the water and just cook the sweet potatoes in sugar, and add 1 tbsp of butter immediately after you turn the heat off.
