Beer and Cheese Soup

Introduction

I love to fish and have what is known as a shore meal ..but sometimes I'd have to go to town for dinner when the trout wouldn't cooperate.... Sometimes in my haste to be outside, I'd take off to the mountain stream without the appropiate fly and fail to match the hatch... then off to town I'd go for a cold beer and hearty meal...I happened into a little Cantina (made complete with dog under my stool) outside Santa Fe'....I'm sorry to say that progress failed to include this simple little place I scribbled this recipe on a bar napkin some 30 years ago and have added to and adjusted ingredients as some chefs are reluctant to share trade secrets I hope you enjoy this soup You can play with the ingredients and change the flavor by using different beers herbs and cheese

Ingredients

Serves: 3

  • 2 cups chicken broth
  • 2 cups heavy cream
  • 1 cup lager
  • 2 cups Cheddar cheese
  • 1 teaspoon crushed red chile
  • 1 bunch fresh chives
  • ¼ cup flour
  • ¼ cup butter

  • I like a nice heavy non reactive pot for this and always shy away from aluminium and non-stick coated things
  • Open your favourite lager and drink half the pint to get you in the mood for hanging round the kitchen instead of going out.
  • Then start making a roux with the butter and flour, slowly add milk and chicken broth saving the lager, chillies herbs and grated cheese for last
  • You may want to add salt and cracked pepper but if you're like me ...the chicken broth has plenty already.
  • I like to serve this with a few long chives standing up in billowy cream..the bright green strands from a cloud of sour cream is really pretty! You may want to customize this with your favourite herbs to enhance the flavour of lager and cheese
  • This is a wonderful soup and can handle just about any beautiful herb snipped fresh from your garden

    • very nice indeed. I swapped out lager for a good ale and chives for spring onions - you want a decent mature cheddar if you can, cheap stuff doesn't cut through the other flavours enough.
