- 375 grams sultanas
- 250 grams soft light brown sugar
- 300 millilitres tea (strong, hot)
- butter (for greasing)
- 300 grams self-raising flour
- 1 egg (beaten)
- 13¼ ounces golden raisins
- 8⅚ ounces soft light brown sugar
- 11 fluid ounces tea (strong, hot)
- butter (for greasing)
- 10⅗ ounces self-rising flour
- 1 egg (beaten)
Method

- Put sultanas, sugar and tea into a large bowl, stir well then cover and leave to steep for at least 8 hours.
- Grease a 1kg/2lb loaf tin and line the bottom with greaseproof paper.
- Stir the flour and egg into the fruit mixture, mix thoroughly, pour into the loaf tin and level surface.
- Bake in heated oven at 150°C/300°F/Gas 2 for 1h1/2 to 1h3/4 until well risen and firm to touch.
- Leave to cool in tin for about 10 mins, then turn onto wire rack.
- Put golden raisins, sugar and tea into a large bowl, stir well then cover and leave to steep for at least 8 hours.

This is a great tea brack but a bit sweet for my palate. My solution is to used mixed fruit with peel rather than sultanas; use 50-100g (it doesnt seem to make much difference!)'brown sugar and 100g of grated carrot rather than the suggested amount; 2 med eggs not 1 large; and spice it up with cinnamon and mixed spice (scant 1 tsp ea). But all the principles are the same. Do give me credit if you use it on the site please, you know how popular carrot cake is! Best wishes, Alex Brunel
