Cucumber and Lime Rice

Ingredients

Serves: 2

  • 2 cups rice (cooked)
  • 4 tablespoons lemon juice
  • 4 chopped finely cucumber )
  • peanuts
  • 2 tablespoons oil
  • 3 green chiles (slit vertically)
  • curry leaves
  • mustard seeds
  • 1 pinch of asafoetida
  • 1 teaspoon turmeric
  • salt (to taste)
  • chopped cilantro (for garnishing)

Method

Cucumber and Lime Rice is a community recipe submitted by Sneha and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Heat the oil in a pan. Then add mustard seeds, peanuts, turmeric powder & asafoetida.
  • Once the mustard & peanuts start crackling add green chiles and curry leaves and leave the pan for a few seconds on a low flame before taking it off the heat.
  • Now in a separate serving bowl, take the cooked rice and add in chopped cucumber.
  • Add salt and mix well. Now add the oil mixture into it followed by lime juice. Mix well.
  • Garnish with coriander and its ready to serve.
  • Additional Information

    Can be eaten with curd. This rice goes very well with fish curry or chicken curry.
