Cucumber and Lime Rice

Heat the oil in a pan. Then add mustard seeds, peanuts, turmeric powder & asafoetida. Once the mustard & peanuts start crackling add green chiles and curry leaves and leave the pan for a few seconds on a low flame before taking it off the heat. Now in a separate serving bowl, take the cooked rice and add in chopped cucumber. Add salt and mix well. Now add the oil mixture into it followed by lime juice. Mix well. Garnish with coriander and its ready to serve.

- 2 cups rice (cooked)
- 4 tablespoons lemon juice
- 4 chopped finely cucumber )
- peanuts
- 2 tablespoons oil
- 3 green chiles (slit vertically)
- curry leaves
- mustard seeds
- 1 pinch of asafoetida
- 1 teaspoon turmeric
- salt (to taste)
- chopped cilantro (for garnishing)
