Metric Cups
  • 25 grams butter
  • 1 onion (chopped)
  • 1 clove garlic (crushed)
  • 1 tablespoon ground coriander
  • 450 grams sweet potatoes (grated)
  • 2 red peppers (chopped)
  • 700 millilitres vegetable stock
  • 400 grams coconut milk (one can)
  • ⅞ ounce butter
  • 1 onion (chopped)
  • 1 clove garlic (crushed)
  • 1 tablespoon ground coriander
  • 15⅞ ounces sweet potatoes (grated)
  • 2 red bell peppers (chopped)
  • 25 fluid ounces vegetable broth
  • 14⅛ ounces coconut milk (one can)

Method

  • Melt the butter in a large pan and cook the onion and garlic over a low heat until soft.
  • Add the coriander and cook for 1 minute. Add the sweet potato and pepper, cook for 5 minutes.
  • Pour in the stock and bring to the boil; cover then simmer for around 20 minutes.
  • Allow to cool a little then puree
  • Return to the pan, add the coconut milk, heat gently until piping hot then serve.

    • Oh my goodness, just made this, it's silky and comforting. A spritz of lemon, lime or even orange and a little dried chilli flakes ast the end, pure heaven!

    • Absolutely love this recipe, I have made it so many times. I leave out the coconut milk and it is still really tasty.
