Very Yummy, and keeps well in the freezer, though be forewarned ... they may not make it that far.

Ingredients

  • 1 lemon zest
  • 2 lemons (juiced)
  • ⅔ cup butter
  • 1 cup brown sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup quick-cooking oats
  • 1 can sweetened condensed milk

Method

  • Cream together butter and brown sugar.
  • Add flour, baking powder, salt and quick-cooking oats. Mix until crumbly.
  • Press half the mixture into 9" square pan. Combine zest, juice and condensed milk and pour over crust.
  • Sprinkle remaining crust mixture over top.
  • Bake at 350 degrees for 30 minutes or until edges are slightly browned.
  • Chill before serving. Freezes well.
