Mashed Potato Casserole

Peel, cook, drain and mash potatoes till smooth. Add remaining ingredients and beat till light and fluffy. Cool and put in casserole and dot with butter. Cover. Remove from fridge one/two hours before heating at 350 degrees for 30 minutes or so. If you want, top with a can of French Fried Onions.
Introduction
Great for any occasion, quick to prepare and can be kept in fridge days until ready to reheat - making it ideal for a big meal, like Christmas dinner!

- 5 pounds potatoes
- 6 ounces cream cheese
- 1 cup sour cream
- 2 teaspoons onions
- 1 teaspoon salt
- freshly ground pepper
- 2 tablespoons butter
