One Pot Pork Chop Supper

Introduction
A variation on the classic Greek Pork & Potatoes in the oven. I've added some extra flavours and some vegetables I had lying around to make this an all-in-one-shove-it-in-the-oven-and-forget-it dish. I limited the oil to 1 tablespoon for dietary reasons, but if you want to be more Greek, add lashings of it!

Ingredients
Serves: 2
- 2 pork chops
- 1 clove garlic (a fat clove)
- 1 teaspoon wholegrain mustard
- 2 teaspoons honey
- 3 potatoes (washed, scraped or peeled and cut into large wedges)
- 1 teaspoon kalamata oil
- 1 large courgette (cut into 8 wedges)
- 1 red onion
- 1 red florini pepper (sliced to match the onion)
- 1 green florini pepper (sliced to match the onion)
- 1 tomato (diced)
- sea salt
- freshly ground pepper
