In a saucepan, gently melt the butter. Add the semolina - it will "absorb" all the butter and seize up, but keep stirring over a low heat while you gently warm the milk up to dissolve the sugar. Don't let the milk boil. When the milk is warm and the sugar has melted into it, ladle a spoonful into the buttery semolina mixture. It will absorb pretty quickly, and gradually add the rest of the milk, stirring till very thick. Transfer this mixture into a tin or bowl of some sort and allow to cool and thicken. This isn't a fancy dish, but delicious and the whole is definitely greater than the sum of its parts. Feel free to stir in fruit of some sort - passionfruit in particular is lovely but tonight I made some with chopped tinned peaches and have nothing to complain about.
