This recipe (in all honesty) came off the side of the semolina packet. But please try it - there are hardly any ingredients but the result is comforting and delicious!

Metric Cups
  • 100 grams butter
  • 250 millilitres semolina
  • 375 millilitres milk
  • 250 millilitres sugar
  • 4 ounces butter
  • 1 cup semolina
  • 13⅙ fluid ounces milk
  • 1 cup sugar

Method

  • In a saucepan, gently melt the butter. Add the semolina - it will "absorb" all the butter and seize up, but keep stirring over a low heat while you gently warm the milk up to dissolve the sugar. Don't let the milk boil.
  • When the milk is warm and the sugar has melted into it, ladle a spoonful into the buttery semolina mixture. It will absorb pretty quickly, and gradually add the rest of the milk, stirring till very thick.
  • Transfer this mixture into a tin or bowl of some sort and allow to cool and thicken. This isn't a fancy dish, but delicious and the whole is definitely greater than the sum of its parts. Feel free to stir in fruit of some sort - passionfruit in particular is lovely but tonight I made some with chopped tinned peaches and have nothing to complain about.
