Fruit Cake With Yoghurt Batter

Put sugar and eggs in a bowl. Mix them for about 2 minutes until the mixture is light yellow. Add yoghurt, flour, oil, baking powder and nuts and mix for about 30 seconds. Grease a baking tin and pour in the mixture. It should be about 2 cm high. Prepare the fruit - halve apricots or peaches and put them in the mixture in a pattern that you like. You can add blueberries or rasperries. Bake at 180 degrees C for about half an hour until golden brown. Let it cool to a room temperature and serve.
Introduction
This cake is so easy to make and so refreshing. You can eat it as dessert or even for breakfast. I've been making it for years and still love it.

- 1 cup sugar
- ½ cup vegetable oil
- 1½ cups flour
- 2 eggs
- ½ teaspoon baking powder
- ½ tablespoon ground hazelnut meal
- 7 fresh apricots (nectarines or peaches or 2 cups blueberries or raspberries)
- 1 cup plain yogurt
- ½ tablespoon walnut
- ½ tablespoon crumbled almonds

Additional Information
You can use all sorts of fruit, but not apples or pears. It's best to stick to summer fruit, such as apricots, nectarines, blueberries... The cake in the picture was made with apricots and raspberries.
