Walnut-Pineapple-Raisin Tea Bread

Stir together the flour, baking powder, bicarb and salt. Set aside. Beat the butter and sugar til creamy. Add in thee gg and orange juice. Beat well. Add a third of the flour mixture and stir in well. Add the rest of the flour mixture, pineapple with about 3 tbsp of the juice and raisins. Stir til combined. Pour into greased baking pan or loaf tin. Scatter the top with the walnuts. Bake in 160 degrees Celsius oven for 30 mins. Leave to cool in the pan for 10 mins before removing and cooling completely on a wire rack.
Introduction

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup softened unsalted butter
- ¾ cup sugar
- 1 egg
- ¼ cup orange juice
- ¾ cup crushed pineapples (reserve the juice)
- ½ cup raisins
- ½ cup chopped walnuts

Additional Information
I have tried substituting the raisins with dried cranberries, which worked well too.
