Peanut Butter and Bacon Sandwich

Toast the bread slices for a minute or so, just to get the sides a little crisp and slightly golden. Spread the peanut butter generously on one side, and top with the banana slices and bacon strips. Cover with the other bread slice, and cut in the diagonal. I tried frying the stuffed bread with a dab of butter just like Nigella did in one of her shows, and it became even more glorious. The bread gets more integrity, not crumbly when it is toasted. Plate your masterpiece with loads of your favourite sour and cream-flavoured potato chips.
Introduction
This is one of those recipes which you can enjoy effortlessly. It's perfect for a rainy day when everything seems to slow down, and you're into some kind of respite. I learned this from a friend in the States. Thought I might share it with you. It is so simple, you need not go out especially to get the ingredients, and yet it is so satisfying.

- 2 slices white bread (your favourite, one that is dense and creamy is excellent for this dish)
- 2 tablespoons peanut butter (heaped, crunchy or smooth, it doesn't matter - I prefer crunchy)
- 1 medium banana (ripe, cut lengthways)
- 4 rashers bacon (crisply fried or baked)
