Put the Spinach in a little water and let it wilt down. It will reduce a lot. Cool it and divide in 2. Cut bacon in small pieces I tend to use scissors. Fry and cool and divide in 2 portions. When the spinach and bacon are cool place half inside the beef (cut the beef halfway like a book) and also cut some of the Gorgonzola and place inside the beef. Close the beef and tie it up. Seal the meat by placing in a very hot frying pan with oil and make sure all sides are sealed. Then place in the oven 40 minutes at 220. (medium) Now for the sauce. Melt down the gorgonzola with the cooking cream, add bacon and spinach and when all melted just whizz with an electric food processor until it is smooth.
Introduction
This was made for me by my sister who got the recipe from a friend. I make it without too many measurements so don't get hung about too much on quantity go also by tasting. If you feel you need more cheese, just add it. Fantastic for dinner parties and I have heard my guests puurrrr.

- 18 ounces gorgonzola cheese
- 2 cups cooking cream
- 18 ounces spinach
- 5 slices bacon
- 1 salt (to taste)
- 2⅕ pounds beef (Tenderloin, sirloin or fillet whatever your preference)
- 1 pepper (to taste)

You can make smaller quantities using the same method. It is lovely Gorgonzola,bacon and spinach the flavours work very well together.
