Mango Salsa

Combine the mango, cucumber, jalapeno, scallion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.
Introduction
I love mango when it is in season, and in the summer I love this fruity salsa on spicy meat. It is best if eaten the next day, but if you need it right away it will still be very tasty.

Serves: 6-8
- 1 mango (peeled and diced)
- ½ cup cucumber (peeled, seeded and diced)
- 1 tablespoon finely chopped jalapeno peppers
- ¼ cup diced scallions
- 1 tablespoon lime juice
- 1 tablespoon finely chopped) cilantro
- salt
- pepper

Additional Information
You can add a diced avocado to this salsa just before serving for a creamy twist. I do this frequently in place of a proper Guacamole. Fresh tomato is also a nice addition, if you like that sort of thing.

This is delicious and now a firm favourite with my family. We often have a quick family dinner of fish tacos and we pile this on top !!!
