Banana Pancakes

Melt 2oz of the butter in a pan on medium heat. Leave to cool. Put the banana in a bowl and mash it up with a fork add the eggs, milk, vanilla and melted butter. Give it a quick mix put to one side. In a mixing bowl add the dry ingredients Give a quick mix. Add the banana mixture and mix till all blended (There will be lumps from the banana) On medium heat add the rest of the butter and melt it pour into a bowl. Then add 1/4 cup full of the batter to the pan and cook flip over to cook on both sides place on plate and pour in the butter give a quick swirl around the pan and back into the bowl. Repeat with the rest of the mixture. voila

- 3 ounces butter
- 7 ounces flour
- 2 tablespoons superfine sugar
- 3 teaspoons baking powder
- ¼ teaspoon salt
- 2 small bananas (ripe and peeled)
- 2⅖ cups milk
- 2 eggs
- ½ teaspoon vanilla essence
- maple syrup (topping)
- sliced bananas (for topping)
