Introduction

light and fluffy really creamy (dessert or starter fab for brekkie)

Ingredients

Serves: 6

  • 3 ounces butter
  • 7 ounces flour
  • 2 tablespoons superfine sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 small bananas (ripe and peeled)
  • 2⅖ cups milk
  • 2 eggs
  • ½ teaspoon vanilla essence
  • maple syrup (topping)
  • sliced bananas (for topping)

Method

  • Melt 2oz of the butter in a pan on medium heat. Leave to cool.
  • Put the banana in a bowl and mash it up with a fork add the eggs, milk, vanilla and melted butter.
  • Give it a quick mix put to one side. In a mixing bowl add the dry ingredients Give a quick mix.
  • Add the banana mixture and mix till all blended (There will be lumps from the banana)
  • On medium heat add the rest of the butter and melt it pour into a bowl.
  • Then add 1/4 cup full of the batter to the pan and cook flip over to cook on both sides place on plate and pour in the butter give a quick swirl around the pan and back into the bowl.
  • Repeat with the rest of the mixture. voila
