Rub the shrimp with lime juice and keep aside. Heat 3 tablespoon of oil in the pan, slide in the chopped onions and sprinkle a bit of salt .This will soften the onions and keep them glistening white. After they turn a bit translucent add the tomato paste, pinch of turmeric and garlic and stir well. Let it cook for 5 minutes till oil starts to separate from it. Now add ground cumin and pinch of sugar and stir it well. Leave to simmer for few minutes on a gentle heat. Now at last add the shrimp into the tomato and spice and turn them over in the spices Cover and cook for 2 minutes. In another pan heat 2 tablespoon of oil and sprinkle some salt. Now add the cooked rice and stir well Now pour the prawn gravy into the rice Mix them really well so that the rice is well coated with the gravy. Generously sprinkle chopped coriander Turn off the heat and cover for a minute and serve.

- 2 cups cooked rice
- 4 ounces shrimp
- 1 tablespoon lime juice
- 2 large tomatoes
- 2 onions
- 2 cloves garlic
- 2 green chiles
- 1 pinch of turmeric
- 1 teaspoon ground cumin
- cilantro (a generous amount)
- 5 tablespoons oil
- 1 teaspoon sugar
- salt (to taste)

The rice should be cold or else it will stick to the bottom of the pan.I I SPRINKLE SOME SALT IN THE OIL TO PREVENT THE RICE FROM STICKING.
