Orange Duck Casserole

Brown the duck in 1 oz of heated butter. Drain and place in a casserole dish. Add onions and carrots to the fat, adding a little more if needed. After 5 mins stir in the flour and cook for a minute Gradually blend in the water and wine, stir until the sauce boils. Add the rind and juices of the oranges then season to taste. Pour the sauce over the duck, cover and cook for 1.5 hours at 375oF / Gas 5, until tender.

- 1 medium duck (about 3.5-4 lb, cut into 4)
- 2 ounces butter
- 2 peeled and sliced onions
- 2 peeled and sliced carrots
- ½ ounce all-purpose flour
- ⅓ pint water
- ½ pint red wine
- 2 oranges (grated rind and juice of)
- salt
- pepper
