Winter Crunch Salad

A lovely accompaniment to a soup, or just as it is as a snack/light meal.

Ingredients

Serves: 4

Metric Cups
  • 1 garlic bread (ready to bake)
  • 2 chicory
  • 2 sticks celery (cut into thin, diagonal slices)
  • 1 bunch radishes (trimmed and quartered)
  • 50 grams walnuts (or pecans, shelled, toasted and chopped)
  • 2 apples (red skinned, cored and cut into slim wedges)
  • 175 grams stilton cheese
  • 5 tablespoons honey and mustard dressing
  • 1 garlic bread (ready to bake)
  • 2 chicory
  • 2 sticks celery (cut into thin, diagonal slices)
  • 1 bunch radishes (trimmed and quartered)
  • 1¾ ounces walnuts (or pecans, shelled, toasted and chopped)
  • 2 apples (red skinned, cored and cut into slim wedges)
  • 6⅙ ounces stilton cheese
  • 5 tablespoons honey and mustard dressing

  • Pre-heat the oven and cook the garlic bread
  • Separate chicory into leaves and toss in a large bowl with the celery, radishes, nuts and apples
  • Crumble the stilton in large chunks over the top
  • Cut half the garlic bread into the marked slices
  • Cut the remainder into chunks and toss into the salad with as much dressing as you like!
  • Serve with the slices of garlic bread on the side
