Buttermilk Fruit Loaf

Preheat oven 175°c. Sift flour, spices and salt together. Mix in fruit. Whisk buttermilk, egg, honey, sugar and oil together. Add to flour mix and combine lightly but thoroughly. Turn into a base-lined and oiled loaf tin and level top with back of a spoon dipped into hot water. Arrange almonds on top. Bake on middle shelf of oven for an hour but at 45 minutes turn it around so it doesn't get too brown on one side. Stand for 1 minute before turning it out onto a rack and removing the paper. Leave to cool before slicing.

- 7⅞ ounces mixed dried fruit
- 13 fluid ounces buttermilk
- 1 egg
- 3 tablespoons honey
- 4 tablespoons superfine sugar
- 4 fluid ounces oil

Love this recipe, it is my husband's new favourite fruit loaf. Very quick and easy to make, I do add more fruit, about half as much again, it keeps very well too - if well hidden! Thank you.
