My mother makes this soup all the time and it is really great in winter or summer.

Ingredients

Metric Cups
  • 3 large carrots (diced)
  • 3 sticks celery (diced)
  • 2 onions (diced)
  • 400 grams chopped tomatoes
  • 2 litres chicken stock
  • 4 medium potatoes (cubed)
  • ¼ savoy cabbage (sliced)
  • 188 millilitres pasta
  • 188 millilitres runner beans (chopped)
  • ½ handful fresh basil (chopped)
  • ½ handful chopped fresh parsley
  • 5 tablespoons olive oil
  • 3 large carrots (diced)
  • 3 sticks celery (diced)
  • 2 onions (diced)
  • 14⅛ ounces diced tomatoes
  • 3½ pints chicken broth
  • 4 medium potatoes (cubed)
  • ¼ savoy cabbage (sliced)
  • 7 fluid ounces pasta
  • 7 fluid ounces runner beans (chopped)
  • ½ handful fresh basil (chopped)
  • ½ handful chopped fresh parsley
  • 5 tablespoons olive oil

Method

Minestrone is a community recipe submitted by toowoombagirl and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • First get a really big saucepan and put it over a low heat and add the olive oil then, the carrots, celery and onion stir well and put the lid on so it can sweat down.
  • Stir every couple of minutes for 10-15 minutes.
  • Now add the tin of tomatoes stir until warmed, add the stock and the potatoes, bring to the boil, turn the heat down to a simmer and cook until the potatoes are half done.
  • Then add the cabbage, pasta and beans simmer until everything is done , taste for seasoning,
  • take off the heat and just before serving stir in the herbs.
