Ingredients

Serves: 6-8

  • ¾ cup sugar
  • ¼ cup brown sugar
  • ½ cup softened butter
  • ½ teaspoon vanilla
  • 1 egg
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1½ cups quick-cooking oats
  • ½ cup raisins
  • ½ cup chopped nuts (optional)

Method

  • Preheat oven 190 degrees Celsius. Line a cookie sheet with baking paper.
  • In a large bowl, combine sugars and butter and beat until light and fluffy.
  • Add vanilla and egg and blend well. Add flour, bicarb, cinnamon and salt then mix well.
  • Stir in oats, raisins and nuts.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheet.
  • Bake 7-10 minutes until edges are a light golden brown colour. Cool for 1 minute then remove to a rack and let cool completely.

    • Hi, i love these cookies. But when I keep them in a box the same day they lose the crisp on the edges. Do you have any tips for me please?
