Heat oil. Crack the eggs in one at a time, when just beginning to turn white dot the olives around the eggs but don't break the yolk! Don't turn the egg over. Once egg is done slide onto a plate, add salt and pepper squeeze some lemon over the top and eat with buttered bread.

Introduction
I had this in Cyprus, it takes 3 mins and all you need is olive oil, egg and lemon! Its nice to mop up the yolk with bread. Try frying/grilling sliced halloumi to eat with it!! Wonderful summer brekkie!
