Turkish-Style Tomato Pasta With Halloumi and Mint

In a medium sized saucepan fry the onion in a little in olive oil until softened. Add the tinned toms and stir well. Add water to half way/enough to cook the pasta and drop the stock cube in and stir. Add the pasta and stir. Leave to simmer until the pasta is cooked whilst you grate the halloumi with a sprinkling of dried mint. DON'T drain the pasta, take a slotted spoon to take the pasta out into bowls/plates making sure you get some of the juice in as well and sprinkle over however much halloumi you like.

- dried pasta (any style of shape, I use tagliatelle or penne - enough for the amount you are cooking for)
- 1 onion (finely sliced)
- 1 chicken stock cube (or vegetable)
- 1 tin chopped tomatoes (small)
- boiling water (from the kettle)
- dried mint
- halloumi (however much you want, grated over at the end - you could also use feta if you want)
- dried pasta (any style of shape, I use tagliatelle or penne - enough for the amount you are cooking for)
