Drizzle a little olive oil over the pizza base and warm gently in oven Deseed and chop the toms roughly, then pour over a little olive oil and splash of vinegar, leave to let the flavours absorb at room temp Take the warmed pizza base and spread with as much pesto as you wish, then the tomato mixture. Grind over pepper, scatter over plenty of rocket, then arrange slices of mozzarella on the top. Cut into wedges
Introduction
I went to a Prezzos restaurant the other day and had this as a light lunch.I dont like pizza as a rule,but this is fresh and delicious and not at all 'pizza hut' My new fave and so simple! could be used as a starter,main or a snacky tapas type thing

- pesto
- buffalo mozzarella
- rocket
- chopped tomatoes
- white wine vinegar
- extra virgin olive oil
- freshly ground pepper
