Put onions and celery in a large soup/stock pot and add enough water to just cover. Boil until water has evaporated. While onions and celery are cooking, brown sirloin in a large frying pan. When water has evaporated from pot, add chopped green bell pepper, garlic, jalapeno, and chillies along with chili powder, cumin, salt, pepper, and sugar. Stir ingredients for 1-2 minutes and then add browned sirloin, tomatoes, beans, and tomato soup. Stir well and bring to a gentle simmer (10 minutes or so). Once you've got a good simmer going, add chocolate. Stir mixture regularly and cook on low for 1 hour and 15 minutes.

This is a chilli recipe I adapted from my Mom's. This always gets raves from everyone who tries it!

- 2 pounds ground top loin steak ( drain off fat and liquid after browning - you can also use ground round or chuck)
- 1 cup chopped celery
- 2 cups chopped onions
- 1 large chopped green bell pepper
- 1 can tomato soup (small can)
- chopped finely green chiles
- 1 small deseeded and minced jalapeno peppers
- 2 cans plum tomatoes
- 2 cans kidney beans
- 3 tablespoons chili powder
- 3 tablespoons cumin
- 3 cloves fresh, minced garlic
- 1 tablespoon sugar
- 2 ounces unsweetened chocolate
- salt
- pepper
