In a warm bowl, whisk the eggs and cream and cheese together, add the pepper. Fry in a pan the bacon/pancetta chopped up, add more pepper, when sizzling add the mushrooms fresh or soaked ones, then when the pasta is boiling and cooked to taste, add the hot pasta to the bowl with the egg mixture in, stir really well using fork and wooden spoon, add the sizzling meat and mushroom mixture last and then the cheese, mix again. It is sublime! Works well with tagliatelle too.

- spaghetti (good quality, thick - cook well)
- bacon (or pancetta or ham)
- Parmesan cheese (lots)
- fresh parsley (flat leaf or curly)
- 3 eggs
- cream
- pepper (lots)
- mushrooms (soaked porchini works well)
