Scallops Seared in Lemon Juice With Fresh Thyme

Place a heavy cast iron frying pan or skillet on the cooker and heat. Add lemon juice and when it sizzles, scrunch thyme in your hands to release flavour and add to pan. Cook until heated through but not browned. (Keeping the heat high sears rather than sizzles)
Introduction
The internet delivery arrived and my scallops were defrosted so I made this while unpacking the bags. Simple, fast and (I think) delicious !

- scallops (frozen or fresh)
- 1 lemon (juice of)
- 1 bunch fresh thyme
