This apple pie has a tender pastry and a sweet, moist apple filling. It can be served hot, warm or cold. It can be served for breakfast, as a mid-day snack, or as dinner dessert. Surely, it will take you some time to prepare the dough, but it's worth the effort. What I liked the most -it smelled particularly wonderful while baking.

Ingredients

Serves: 6-8

Metric Cups

For the Dough

  • 280 grams flour
  • 100 grams caster sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 120 grams butter (cold and cut into pieces)
  • 2 large eggs (divided)
  • 120 millilitres milk
  • 1 teaspoon best vanilla extract

For the Filling

  • 4 apples (peeled, cored and cut into small chunks)
  • 3 tablespoons caster sugar
  • ¼ teaspoon cinnamon

For the Garnish

  • granulated sugar

For the Dough

  • 9⅞ ounces flour
  • 3½ ounces superfine sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 4¼ ounces butter (cold and cut into pieces)
  • 2 large eggs (divided)
  • 4 fluid ounces milk
  • 1 teaspoon best vanilla extract

For the Filling

  • 4 apples (peeled, cored and cut into small chunks)
  • 3 tablespoons superfine sugar
  • ¼ teaspoon cinnamon

For the Garnish

  • granulated sugar

Method

Apple Scone Pie or Simple Apple Pie is a community recipe submitted by Vishinka and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preparation: Whisk together the flour, sugar, baking powder, and salt. Then add butter. Mix well.
  • In another bowl, whisk together the remaining egg, remaining milk, and vanilla extract and add to the flour mixture.
  • Mix all ingredients together.
  • Divide the dough into two balls, one lightly larger than the other. The larger ball will be the bottom crust and the smaller ball will be the top crust. Place one half of the dough onto the bottom of cake plate.
  • In a separate bowl, mix lightly cut apples, sugar and cinnamon. Place this mixture ontho the bottom of the dough.
  • Cover the apples with the remaining dough. Pinch the edges together with the edges of the bottom dough. Seal two edges together with a fork or pinch it with your fingers into a pattern. In a small bowl whisk together one egg and 1 tablespoon from the 1/2 cup milk.
  • Set this aside as it will be used as a glaze for the top of the cake. Brush the top of the dough with the egg and milk glaze, and sprinkle with white sugar. With a sharp knife cut several slits in the top crust to allow steam escape as the cake cooks.
  • Bake at 350 degrees F (177 degrees C) for 35-45 minutes until pastry is nicely browned.
