Warm-You-Up Chicken Curry

Introduction

This chicken curry is the go-to comfort food for our family. It's spicy and hearty and gives you a warm feeling that only home-cooked meals can do.

Ingredients

Serves: 4

  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 raw chicken breasts (cubed)
  • 3 cups chicken broth
  • 3 large carrots (chopped)
  • 1 large potato (peeled and cubed)
  • 1 large red bell pepper (chopped)
  • 1 teaspoon cumin
  • 3 tablespoons curry powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cans coconut milk
  • 1 cup green peas (frozen/thawed)
  • 3 cloves garlic (chopped)
  • 1 cup scallions (chopped tops)
  • 5 medium lemons and zest
  • 3 tablespoons fresh parsley (chopped)
  • 4 cups rice (cooked)

  1. Cook chopped onions and cubed chicken in olive oil over medium heat until onions become glassy and transparent.
  2. Add broth, carrots, potatoes (optional), celery, and red bell pepper, and seasonings. Cook until carrots and potatoes are just tender.
  3. Add coconut milk, frozen or thawed peas, garlic. Cut lemons into halves and squeeze lemon juice into the pot. Add lemons halves and stir.
  4. Simmer very slowly over low heat for 10 to 15 minutes.
  5. Serve over cooked rice or cooked rice noodles.
  6. Sprinkle the top of each serving with chopped green onions, parsley (or both)!
