Introduction
This chicken curry is the go-to comfort food for our family. It's spicy and hearty and gives you a warm feeling that only home-cooked meals can do.

Ingredients
Serves: 4
- 2 tablespoons olive oil
- 1 large onion (chopped)
- 2 raw chicken breasts (cubed)
- 3 cups chicken broth
- 3 large carrots (chopped)
- 1 large potato (peeled and cubed)
- 1 large red bell pepper (chopped)
- 1 teaspoon cumin
- 3 tablespoons curry powder
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cans coconut milk
- 1 cup green peas (frozen/thawed)
- 3 cloves garlic (chopped)
- 1 cup scallions (chopped tops)
- 5 medium lemons and zest
- 3 tablespoons fresh parsley (chopped)
- 4 cups rice (cooked)
Method

- Cook chopped onions and cubed chicken in olive oil over medium heat until onions become glassy and transparent.
- Add broth, carrots, potatoes (optional), celery, and red bell pepper, and seasonings. Cook until carrots and potatoes are just tender.
- Add coconut milk, frozen or thawed peas, garlic. Cut lemons into halves and squeeze lemon juice into the pot. Add lemons halves and stir.
- Simmer very slowly over low heat for 10 to 15 minutes.
- Serve over cooked rice or cooked rice noodles.
- Sprinkle the top of each serving with chopped green onions, parsley (or both)!
