Stilton and Pecan Bites

Preheat the oven Gas 4. Line 2 baking trays with baking paper. Sift flour, pepper and mustard together. Add the butter, and combine until it resembles coarse breadcrumbs. Add the cheese, then add the egg and mix until it forms a dough. Chill for 30 mins. Roll out the dough to a thickness of 5mm and cut in rounds. Transfer to the baking trays. Brush with egg and place a pecan on each one. You can also sprinkle with a little sea salt if you like. Bake for 15-20minutes. Cool on a wire tray.
