  • 225 grams plain flour
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon English mustard powder
  • 125 grams butter
  • 50 grams stilton cheese (crumbled)
  • 75 grams Cheddar cheese (grated)
  • 75 grams pecan nuts
  • 1 egg (lightly beaten)
  • 8 ounces all-purpose flour
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon English mustard powder
  • 4 ounces butter
  • 2 ounces stilton cheese (crumbled)
  • 3 ounces Cheddar cheese (grated)
  • 3 ounces pecan nuts
  • 1 egg (lightly beaten)

Method

  • Preheat the oven Gas 4. Line 2 baking trays with baking paper.
  • Sift flour, pepper and mustard together. Add the butter, and combine until it resembles coarse breadcrumbs.
  • Add the cheese, then add the egg and mix until it forms a dough. Chill for 30 mins.
  • Roll out the dough to a thickness of 5mm and cut in rounds. Transfer to the baking trays.
  • Brush with egg and place a pecan on each one. You can also sprinkle with a little sea salt if you like.
