Make the pancake base by mixing the egg, flour, and a part of milk. Stir until smooth, then add the rest of the milk, salt and pepper. The batter should be about single cream thickness. Cook the frankfurters and the chopped carrot. Slice the frankfurters (or uncooked sausages) very thinly, and add them to the batter, together with the carrot, sweetcorn to taste and chopped parsley leaves. Add a teaspoon of oil in a frying pan, heat, then spread a ladle of batter in the pan very thinly. Fry both sides until golden. When the pancakes are ready, spread grated cheese on top and fold in two. Enjoy!
