- 2 carrots (peeled and finely chopped)
- 6 cloves garlic
- 500 millilitres chicken stock
- 4 tablespoons extra virgin olive oil
- 1 pinch of sea salt
- 1 pinch of white pepper
- 45 grams unsalted butter
- 2 medium onions (peeled and finely chopped)
- 2 sticks celery (finely chopped)
- 2 bunches fresh thyme
- 4⅖ pounds pork loin (bone in)

Serve with green beans and potato gratin. Our favourite gratin is chopped potatoes boiled in butter, garlic and loads of double cream-then when softtish bake quickly in a hot oven. Enjoy with a good light red or a heavy white wine.
